Hi All, been so busy these days so haven't been posting much but hey here I am with a classic Kerala dish made with Mangoes and Coconut. Its called
MAMBAZHA PULISERI
INGREDIENTS
MANGOES : 2 RIPE AND SWEET
COCONUT: 2 TBSP
RED CHILLI: 2-3
VENDHAYAM ( METHI SEEDS): 1 tsp
CURRY LEAVES
MUSTARD SEEDS FOR TADKA
SALT AS REQUIRED
OIL 1 TSP
TURMERIC A PINCH
TAMARIND JUICE : 1 TSP IF NEEDED
MAKING:
Cut the Mango into small cubes and cook them with enough water, Turmeric and salt. In a pan, fry Red Chilli's and Methi seeds in 1/8 tsp oil until light brown, switch off the gas and add coconut in it. Grind the Coconut mixture into a nice paste. Once the Mango pieces are cooked, add the paste to it and allow it to boil for a couple of minutes. For, Tadka, in a Tsp of oil, add some Mustard and Methi seeds, once the Mustard seeds splutter, add the tadka (Tempur) to the Mango Puliseri. Finally Garnish it with fresh Curry Leaves. Delicious Mambazha Puliseri is ready to eat. Eat it with rice or as a side dish to Roti's. Easy and Simple to make.
TIPS/VARIATION
if the Mangoes are just sweet with no sourness in it, then add a TSP of Tamarind Juice to it. It will add on to the taste of the Puliseri. You will add the juice right after the Mangoes are thoroughly cooked and before adding the coconut paste.
